Notes on bread baking

1 Dec 2025

I still have a few pages left to read, so maybe more on this later. Nothing dramatic happened, but I came home in a much better mood.

It is funny how the smallest routines end up holding the whole week together. I took the long way back, past the old houses near the water. I did not plan much this time, and it turned out to be the best part.

A friend recommended it years ago and I finally got around to it. By the evening the light was soft and everything looked a little kinder. The weather changed three times before noon, which is normal around here. It reminded me how much I enjoy doing one thing at a time.

There is a bakery on the corner that opens before sunrise, and I have become a regular. Most of the afternoon went by without me noticing. If you have a favourite version of this, I would love to hear about it someday.

The recipe is simple, the trick is to be patient with it. I wrote a few lines in my notebook and then simply watched people pass by.
